Strawberry Vinaigrette


Fresh strawberries are, in and of themselves, enough reason to adore summer... so sweet, juicy and flavorful- plus this time of year, they are very affordable! 

When I was 12, my friends and I would pick berries at the berry farm to earn a little extra cash in the summers. I always ended up making the least amount of money out of my group though because 1) I was very particular about which berries made it to my bucket (completely ripe and no blemishes) and 2) if a berry looked that good, I generally just popped it in my mouth. 

From smoothies to homemade popsicles, fresh strawberry cake to strawberry mocktails, it is one of the flavors on repeat in my summer recipes. This delicious dressing is very easy to throw together and is quite healthy!

I like to drizzle it over baby spinach, sliced strawberries, almonds or pecans, diced avocado and crumbled feta cheese. 

What You'll Need:
1 cup strawberries, sliced
2 1/2 tbsp apple cider vinegar 
1 1/2 tbsp champagne* 
1 tbsp sugar
pinch of salt 

What To Do:
Slice and hull strawberries. Sprinkle with sugar and allow to sit, covered, for one hour. Then, combine all of the ingredients in a blender and blend until smooth. 

*Can substitute champagne vinegar for the champagne and apple cider vinegar.
