What You'll Need:
(serves 2)
for fish:
1 tsp olive oil
2 tilapia filets
salt and pepper to taste
for rice:
2 tablespoon canola oil
1 clove garlic, minced
1/4 large onion, chopped
1/2 cup long-grain rice
dash kosher salt
1 cup low-sodium chicken broth
Juice of 1 lime
Chopped fresh cilantro, for garnish
for topping:
Strawberry-Avocado Salsa
What To Do:
Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn't burn. Add the broth, chopped cilantro and the juice and zest of 2 limes and bring it to a boil. Reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. The rice shouldn't be sticky.
While the rice simmers, season tilapia filets with salt and pepper. Heat oil over medium heat, add fish and cook 1-2 minutes on each side or until fish is white and flakes with a fork.
Just before serving, stir through the juice of 1 lime and lots of chopped cilantro into the rice. Layer rice, fish and salsa on your plate. Delicious!
